Quinoa Salad with Chickpeas and Vegetables

 

Ingredients:
– 1 cup quinoa
– 2 cups water or vegetable broth
– 1 can (15 oz) chickpeas, drained and rinsed
– One cup cherry tomatoes, halved
– 1 cucumber, diced
– One red bell pepper, diced
– 1/4 cup red onion, finely chopped
– 1/4 cup fresh parsley, chopped
– Juice of 1 lemon
– 2 tablespoons olive oil
– Salt and pepper to taste

 

Instructions:
1. Rinse the quinoa thoroughly under cold water.
2. In a saucepan, bring 2 cups of water or vegetable broth to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until the liquid is absorbed. Remove from heat and let it cool.
3. In a large bowl, combine the cooked quinoa, chickpeas, cherry tomatoes, cucumber, red bell pepper, red onion, and fresh parsley.
4. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
5. Pour the dressing over the salad and toss to combine.
6. Serve immediately or refrigerate for later use. It’s great as a make-ahead lunch option.
